The shipping (Product Carousel) advert is working well, these tend to have a very high impression rate so the CTR will be terrible but do not worry about that for this type of advert.
You mentioned you are unable to see the ice bath within the Product Carousel, I have attached to this update a screenshot of it showing for me.
The adverts are still new so we like to get 3 months worth of data before we can really start seeing and tracking what the AVG CTR will be.
For many industries, an average click-through rate is between 4-6%. So a good or above-average click-through rate in Google Ads would be something like 7-9% of which we are hitting so I am very happy with our current ad strategy plan.
